Edible oils are the prime cooking medium and essential fats required by human body are derived from the oils. The important vitamins are fat soluble, hence, the intake of minimum dietary fat is essential for the overall metabolism of the body. The important vitamins like vitamin E and vitamin A are rich in edible oils which help in skin toning and anti-aging process. The edible oils consumption in India is about 11 kgs per head compared to world average of 18 kgs and 30 kgs in developed countries. Non-affordability of edible oils by the poorer sections of the society is also a major constraint and leading to the malnutrition. Edible oils are traditionally consumed by crushing their own oil seeds in the rural areas.
Due to urbanization and health awareness, now the consumers are preferring refined packed edible oils. Even today 65 – 70% of edible oils are sold in loose form and loose oils are prone for adulteration. The Govt. of India has issued a notification to all the State governments to implement compulsory packaging of edible oils to avoid adulteration and related health problems in the year 1998, so far no state government has implement the order. The consumer awareness is growing and the sale of packed oils is increasing by 15 – 20% per annum.
